Updated docker-compose.yml

* Changed UNRAID_SHARE to MEDIA_SHARE to simplify for other users
* Seperated GUID and PUID so you have more control of permissions
* Removed gluetun VPN as there are much better ways of doing this now - suggest using the qbittorrent image with a built in VPN if you require a vpn
